Healthy Chicken Fajitas Made Easy
Looking for a great tasting, but easy fajita recipe? Look no further! This is a super-simple recipe that you can try the next time you are in the mood for fajitas, but aren’t able to commit a lot of time to prep. Despite the minimal prep time, these fajitas came out great – the chicken basically falls apart and the taste was amazing!
I would definitely recommend removing some of the extra juice that is created due to the crock pot style of cooking. You could even use the extra juice removed to make some really tasty rice to accompany your fajitas!
Slow Cooker Chicken Fajitas Video
Here is a video that takes you through the entire process to prepare these fajitas. Watch it as many times as needed, but I have included the recipe below as well.
- 1 Red Bell Pepper / sliced
- 1 Yellow Bell Pepper / sliced
- 1 Green Bell Pepper / sliced
- 1 Yellow Onion / sliced
- 2 lbs Boneless Skinless Chicken Breasts / cut in half
- 2 Tbsp. Taco Seasoning*
- 4 Cloves Garlic / diced
- 1 Lime
- 1 10 oz Can Diced Tomatoes With Green Chiles / drained
For serving: (optional)
- Flour Tortillas
- Sour Cream
*To make your own Taco Seasoning at home: (or use pre-made taco seasoning mix)
- 1 Tbsp. Chili Powder
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/4 tsp Cayenne Pepper
- 1/3 tsp Oregano
- 1/2 tsp Paprika
- 1 1/2 tsp Ground Cumin
- 1 tsp Salt
- 1 tsp Black Pepper
- 1 tsp Corn Starch
