Do you have a favorite PB2 Recipe?
Wait…first of all, what is PB2?
I have heard several people recently taking about this awesome product and discuss their favorite PB2 recipe. I actually didn’t know what all of the fuss was about? I had been using my Naturally More Peanut Butter for over 2 years and loved it!
Well…I loved it once it was all mixed up. If you have ever purchased truly natural peanut butter, the peanut oil will settle on top of the peanut butter after it has been sitting for awhile. The process of re-incorporating this oil into the peanut butter is one hell of a forearm workout!
After hearing everyone rave about PB2, I decided to give it a try recently. The chatter was well deserved! This stuff is really great! It comes in a 1 lb bag, which is the same amount (by weight) of the natural peanut butter I was previously buying, but only requires about half as much of the powder to constitute the same about of actual peanut butter! WIN!
And…I don’t have to mix it up. Just grab a teaspoon and load it up and plop it into my Shakeology for the day, awesome!
PB2 has the same consistency (when mixed with water) as full fat peanut butter with all of the natural roasted peanut flavor, but with nearly 85% less fat calories. PB2 is made with high quality peanuts that are slow-roasted to our specifications and pressed to remove the oil. All natural with no artificial flavors, sweeteners, or preservatives.
PB2 Powdered Peanut Butter is mixed with water to create a traditional peanut butter mixture. It also works and tastes wonderfully in recipes that call for the use of peanut butter. However, I primarily use it in powder form.
Where can I get PB2?
You can find it online at many retailers, I get mine from Amazon.com. You may also be able to find it at your local health food stores. The manufacturers of PB2 have all of the retail locations listed on their site. You can also order directly from their site.

So what about this PB2 recipe?
OK…Here it is!
PB2 Good Morning Muffins
Ingredients
- 1 cup whole wheat flour
- 1 cup PB2 powder
- 2 Tsp. baking powder
- 1 1/2 Tsp. baking powder
- 1 Tsp. salt
- 2 Tsp. ground cinnamon
- 1 1/2 sticks light butter spread sticks (I would recommend regular stick butter)
- 3/4 cup honey
- 4 eggs
- 2 cups grated carrots
- 1/2 cup oats
- 1 cup unsweetened crushed pineapple, drained
- 1 cup chopped walnuts (optional)
Prep
- Mix dry ingredients.
- Add honey, butter and eggs and mix well.
- Stir in remaining ingredients.
- Pour into muffin cups.
- Bake at 350 degrees for 20-25 minutes.
These muffins are so tasty, and not too bad on the healthy side, that darn butter gets you in trouble though…

can’t you “sub butter” with something healthier? I know you can do flax, applesauce etc as subs for a lot of “bad” ingredients….??
